Quick and Easy Taco Soup

Like many of you, I make out a weekly menu and plan my grocery shopping accordingly. Sometimes, though, the week does not go as planned. What I plan for two meals may  last for only one, or I forget a key ingredient to a recipe and don't want to make another trip to the store for one item. This is why I have a well-stocked pantry and easy recipes for last-minute meals. This recipe is a snap to prepare, and it's perfect for a quick family meal.

Taco Soup

2 pounds lean ground beef
1 1.25-ounce package taco seasoning mix
1 .4-ounce package ranch dressing mix
1 15-ounce can mild chili beans
1 15-ounce can pinto beans, rinsed and drained
1 15.25-ounce can whole kernel corn, drained
1 14.5-ounce diced tomatoes
1 10-ounce can diced tomatoes with green chiles
2 cups water

In a Dutch oven, crumble and cook ground beef over medium heat until no longer pink; drain.  Add taco seasoning mix and stir well. Stir in all the remaining ingredients. Simmer, uncovered, 15 minutes or until heated through, stirring occasionally.  Makes 6 servings.
