Microwave Peanut Brittle

The Christmas shopping is done, all the gifts are wrapped, and the house is clean (well, as clean as it's going to get.)  Now it's time to make some Christmas goodies. This year, it's going to be simple and easy. I'm starting with peanut brittle that takes only 7 minutes to cook and is ready to eat in less than 45 minutes. So if you need something quick, this is it.




Microwave Peanut Brittle

1 cup sugar
1/2 cup light corn syrup
1 cup roasted salted peanuts
1 teaspoon margarine or butter
1 teaspoon vanilla
1 teaspoon baking soda

Butter a cookie sheet. Gather and measure out each ingredient before starting. 
In a large microwave-safe bowl, combine sugar and corn syrup. Microwave on HIGH for three minutes. 
Stir in peanuts, microwave on HIGH for three minutes or until light brown. Stir in margarine or butter and vanilla, blend well. Microwave on HIGH for one minute. 
Add baking soda and stir gently until light and foamy. Working quickly, pour and spread onto the buttered cookie sheet. 
Let cool at least 30 minutes and break into pieces. Makes one pound. 




Now, I think I'll drink some eggnog and bake some eggnog cookies. YUM!
