If you're going to fire up the grill to cook your steak, chicken, or hamburgers, you might as well grill your veggies. In the first post of my Summer Grilling series, I grilled corn-on-the-cob. Now here is a simple way to prepare summer squash.
Grilled Summer Squash
zucchini
yellow squash
olive oil
salt
pepper
Wash and dry the squash and cut in half lengthwise. Brush both sides with olive oil. Salt and pepper to taste.
Heat grill to medium and brush the grate with olive oil.
Place squash on grill and cook for about 5 minutes. Turn, and cook for another 5 minutes, or until crisp-tender.
That's it! So simple and so delicious. Grilling the squash adds a wonderful smoky flavor. Even those who usually turn up their noses at squash, will love it grilled.
Week 1: Corn-on-the-cob
Week 2: Pizza
Week 3: Bananas
Week 4: Marinated Chicken

ReplyDeleteThanks, Janis! I sometimes slice squash with some other veggies, season, and wrap in heavy duty aluminum foil. That's also delicious, but I love the grill marks on the veggies when I cook them directly on the grill.
