If you need a fast family dinner here is one that everyone will love. You can make it with what you have on hand. If you don't have any cheese, just leave it out. Make it work for you and your family. I like the idea of using a recipe as a guideline and as inspiration. Make changes that suit you and your situation, or make it exactly as it's printed. It's up to you.
Beef Taco Rice Skillet
1 pound lean ground beef
1 envelope (1.25 ounces) taco seasoning mix
1 1/2 cups water
1 cup thick-and-chunky salsa
1 cup frozen whole kernel corn
1 1/2 cups uncooked Minute Rice
3/4 cup ( 4 ounces) shredded Mexican blend cheese
1 cup shredded lettuce
1 medium tomato, chopped
sour cream, if desired
extra salsa, if desired
tortilla chips or corn chips, if desired
Cook ground beef in 10-inch skillet over medium heat 8 to 10 minutes , stirring occasionally, until brown; drain if needed.
Stir in seasoning mix, water, salsa, and corn. Heat to boiling; stir in rice. Boil 1 minute; remove from heat. Cover and let stand 8 minutes.
Fluff rice mixture with fork; sprinkle with cheese. Cover and let stand 1 to 2 minutes or until cheese is melted.
If desired, sprinkle lettuce around edge of skillet; sprinkle tomato in circle next to lettuce. Serve with sour cream, salsa, and chips. Makes 6 servings.
Notes: If you know there will be leftovers, add the lettuce, tomato, sour cream, and extra salsa to the individual servings. Then the leftovers can be easily refrigerated and reheated in the microwave.
