What a wonderful Christmas! We had a marvelous time with our oldest son and his fiancée and all the rest of the family. We sure missed the youngest son and his wife. They were visiting her parents for Christmas. We celebrated with them last weekend.
For Christmas breakfast, we had homemade cinnamon rolls and this breakfast casserole. I prepared the casserole Christmas Eve and put it in the frig. Christmas morning, all I had to do was pop it into the oven. This was the first time I made cinnamon rolls. I gave them to friends and family to enjoy Christmas morning. I'll post that recipe later.
Breakfast Casserole
1 pound package breakfast sausage
6 slices bread
2 cups shredded cheddar cheese
6 large eggs
1 pint half and half
1 teaspoon ground mustard
1 teaspoon salt
1/2 teaspoon black pepper
Preheat oven to 350 degrees F. Crumble sausage in skillet and brown over medium-high heat. Spray 9 x 13 inch baking dish with cooking spray. Butter both sides of bread and place in bottom of pan. Sprinkle the cooked sausage and cheese over the bread. Beat together eggs, half and half, dry mustard, salt, and pepper. Pour over the bread, sausage, and cheese. Bake for 40-45 minutes.
Note: To reduce calories, use reduced fat sausage, egg beaters, and nonfat half and half.
Anyone going to hit the after-Christmas sales? I may go by a couple stores to see if I can find a few Christmas decorations for cheap.
