S'more Cups


If you ever camped during the summer, you've made s'mores. Here's an easy way to make mini s'mores at home. I found this recipe on the Pampered Chef website.



S'more Cups

7  whole graham crackers (1 cup finely crushed)
1/4 cup powdered sugar
6 tablespoons butter, melted
4 bars (1.55 oz each) milk chocolate candy, divided
12 large marshmallows


Preheat oven to 350 degrees F. Place graham crackers into a large resealable plastic bag. Finely crush into crumbs. Combine graham cracker crumbs, powdered sugar, and butter in a small bowl.
Place 1 tablespoon of crumb mixture in each cup of a mini muffin pan. Firmly press crumbs to form shallow cups. Bake 4-5 minutes or until edges are bubbling. Meanwhile, break two of the candy bars into rectangles. Remove pan from oven; place one rectangle into each cup.


Cut marshmallows in half crosswise using shears dipped in cold water. Place one marshmallow half, cut-side down, into each cup. Return to oven 1-2 minutes or until marshmallows are slightly softened. Remove pans from oven to cooling rack; cool 15 minutes. Carefully remove cups from pan. Cool completely.
Break remaining candy bars and place in small microwavable bowl. Microwave on high 1 to 1 1/2 minutes or until melted and smooth, stirring every 20 seconds. Dip the top of each marshmallow in melted chocolate. Turn top-side up and let stand 40 to 60 minutes or until set. Makes 24 cups.



Note: Store the cups in a single layer in an airtight container for up to 1 week. Freezing is not recommended.
For a richer chocolate flavor, substitute dark chocolate candy bars for the milk chocolate.
Each cup has 100 calories and 6 g fat.

Actually, I like the size and if (ok, when) I make them again will just go ahead and double it again - and maybe make two batches because these are going quickly!

  20. Found you via Pinterest, and have been drooling over these for 2 weeks. Finally made them this afternoon. We had some trouble with the melted chocolate part; it wouldn't stay melted! We decided it was fine without the dip, but in the future we will probably put a rectangle of chocolate on top as we take them out of the oven, before they cool. Won't be quite as pretty, but they won't last long enough to look at, anyway. :)

  22. Hi I just made these tonight for a BBQ tomorrow. Can you tell me what cutting "crosswise" means for the marshmallows? I can't seem to cut it so that they come out round. I used Kraft marshmallows. How did you get yours to look so round and nice? Yours look amazing!

  23. I cut the marshmallows horizontally. Then I have two thin round marshmallows. I used my kitchen shears dipped in ice water. I hope this helps

  36. Even better - place the completed, marshmallow-topped cups under the broiler to toast the marshmallow on top instead of just softening it. Also, since I'm the weird one and like LESS chocolate on my s'mores, I would melt the chocolate and pipe some into the cups instead of placing a whole solid rectangle piece in there. That would be plenty of chocolate for me :)

  43. just made these. found the recipe on pinterest. i used regular sized muffin tins (not the mini ones), but i didn't make cups, just made a "crust." i didn't add powdered sugar to the cracker crumbs. i used hershey kisses in place of the chocolate bar pieces and i didn't dip the tops in melted chocolate. YUMMIE!

    1. My children and I are gluten-free. You can buy Graham Style crumbs or crackers, by Kinnikinnick foods. They are also dairy free and nut free.

  46. I made these yesterday but they did not turn out like I thought. I was only able to get 12 out of a batch. There was way to much butter for only 1 cup of graham crackers and 1/4 cup powdered sugar. They were so greasy. What did I do wrong?

    1. Jamie, I'm sorry they didn't turn out for you. Make sure you have a full cup of finely crushed graham crackers. It may take more than seven crackers. You can also buy a box of graham cracker crumbs. That's what I do now that I don't have kids at home to eat the leftover crackers. I hope this helps.

    2. I had the same problem, I definitely needed WAY more crackers than the recipe called for and they were super greasy. Oh well... hopefully they'll still taste ok. I like the idea of toasting the tops in the broiler. I just put dollops of melted chocolate on top of mine and that worked really well. Less finicky than trying to dip them.

    1. Depends on how much of the graham cracker mix you used per slot, and how big the pan is, I only got 22 out of mine...

    2. That's right.I think mini-muffin pans can be different sizes. It also depends on how thin you press the crust in each muffin cup. I used the mini-tart shaper from Pampered Chef to press the crumbs into the muffin cups.

I just used the tablespoonful that the recipe called for but I quit before the dipping step because I had the same problem a previous poster had, with them being way too greasy so here's what I did. I dumped them all into a bowl, resoftened the whole mess in the microwave for about 30 secs then mixed in 2 more cups of crackers. I pressed the mix out into a pan, covered with the rest of the chocolate & more marshamallows, popped under the broiler until the marshmellows were toasted & chocolate softened. After they sat in the fridge for about hour they were perfect and I had a whole pan full of smore bars. All's well that ends well!!

    2. I wonder if we Canadians are trying to make an American recipe ... maybe our graham wafers are smaller up here ... I made some that were greesy (haven't eaten them yet, but as I tried to make them initially I had to keep adding graham wafer crumbs and don't actually know how many I used in the end, but clearly it still wasn't enough.) I am not a baker, but I will try to make these again sometime.

    3. I checked the Pampered Chef website and found the metric measurements for the ingredients. Maybe this will help.
      250 ml graham cracker crumbs, 50 ml powdered sugar, and 90 ml butter.

    1. I think there is plenty of butter in the recipe so that the cups pop out easily. If your muffin pan is not nonstick, it won't hurt to give it a light spray though.

    1. Graham crackers are sweetened with sugar and honey. I think you could substitute a plain cookie such as vanilla wafers, ginger snaps, or shortbread. I'd love to hear how they turn out with a different cookie(uh, biscuit).

    I had no issue with them crumbling or sticking and I toasted the marshmallow under the broiler and skipped the dipping. Thank you for sharing such a simple and delicious recipe.

  75. FUN and DELICIOUS! A few changes - you don't need the powered sugar ( save the calories) and not quite as much butter - I used just enough for the cups to stay together. Also - I saved the chocolate bars for a second batch and just broiled the marshmallows - DELICIOUS!!

  77. I made these today but when I tried to remove them from the pan the cups just fell apart. I used fine crumbs and tamped them in pretty well. Baked 5 minutes at 350. Any thoughts?

    1. Ellen, I had a few that crumbled, but most came out with no problems. Find some type of tool to press the crumbs into the muffins cups. Also make sure you use the right amount of butter. I hope this helps. Good luck!

  80. I love S'mores, but these are so cute and somehow look like they'd taste even better. Graham crackers are sized differently than they used to be. The ones I get are much smaller, so I think Sallie is right to encourage us to measure our crumbs. I measured the crumbs in a Jello No Bake cheesecake box once. It was 1 cup of crumbs which called for 2 T sugar and 5 T melted margarine or butter. I wonder what difference it makes using powdered sugar in this recipe. Thank you for your great pictures.

    1. Diane, thanks for the awesome comment! I only buy the graham cracker crumbs, since there are no kids at home to eat the graham crackers. The crumbs also last for months if kept in a ziplock bag.

  82. OMG! I just made these using Godiva chocolate bar instead and let's just say they are almost gone. These are definitely party appetizer APPROVED! I love toasted marshmallows, so I stuck them under the oven broiler for a few, and then topped with chocolate. Thanks so much for the recipe. P.S.     1. Sara, I used the standard marshmallows. You could just as easily used 3 minis on top. Then, you won't need to cut them in half. Use what you have available and make your own variety of s'more cups. Thanks!

  89. I just made these for a BBQ, yes it's December and we are having a BBQ! These are delicious! I wasn't expecting them to tast so great. I'll be making them again for sure. For the chocolate topping I just put melted chocolate in a sandwich bag, cut the end a small amount, and piped it on top. They turned out perfect. Thanks!
