Peach Crisp
1/2 cup quick-cooking oats
1/2 cup honey-sweetened granola
3 tablespoons all-purpose flour
1/2 cup packed brown sugar1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 cup butter
1/2 cup chopped pecans
5 cups fresh peaches, peeled and sliced
1/2 cup sugar
1 tablespoon all-purpose flour
Preheat oven to 375 degrees F.
In a medium bowl, combine the oats, granola, 3 tablespoons flour, brown sugar, cinnamon, and nutmeg. Cut in the 1/4 cup butter until crumbly. Mix in chopped nuts.
Place peach slices in an 8-inch square baking dish. Add 1/2 cup sugar or to taste. Sprinkle with 1 tablespoon flour. Sprinkle the topping mixture over the peaches.
Bake in preheated oven for 30 minutes, or until golden brown.
Serve with a scoop of vanilla ice cream. Makes 6-8 servings.
Note: Next time, I may leave out the oats and use 1 cup of granola. Also, the original recipe calls for 1/4 cup chopped pecans, but we love pecans so I added more.
