Greek Pasta Salad
14 ounces rotini pasta (1 box)
3/4 cup olive oil
1/2 cup red wine vinegar
1 teaspoon garlic powder
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon salt
freshly ground black pepper
20 cherry tomatoes
3/4 cup crumbled feta cheese
1/2 cup chopped green onions
1 (4 ounce) can sliced black olives
Bring a large pot of lightly salted water to a boil. Add rotini pasta and cook 8 to 10 minutes or until al dente; drain.
In a small bowl or jar , mix together olive oil, vinegar, garlic powder, basil, oregano, salt, and pepper.
In a large bowl, mix together cooked pasta, tomatoes, feta cheese, green onions, and black olives. Add about 3/4 of the dressing, and toss gently. Cover and chill for at least 2 hours. If desired, add remaining dressing before serving. Makes 6 or more servings.
I served this with grilled chicken and crusty french bread. Next time, I think I'll try pita bread.
